Flint is one of my favourite restaurants for great steaks.
And when we heard that there would be a visiting Chef last week, we could not wait to partake.

And what an interesting dinner it turned out to be!

26 year old Chef TC, who has worked for a spell at Noma, Copenhagen was the guest chef that night, and here’s what we experienced from his pop up kitchen at Flint…

4 part small bites starting with these pretty flowers in a bowl. Being a firm locavore himself, the entire dinner was filled with local delectables.. with these lacto-fermented plums & flowers being the opening number..

flatbread crackers adorned with dill, wood sorrels, marigolds & creme fraiche soon followed

baby corn with horseradish whipped cream & turmeric leaf oil were simple yet effectively delicious,

somewhat overcooked and oversalted frog legs, kataifi topped with garlic cream & kelp powder, all small bites paired with a Trimbach Riesling & Alois Lageder Gewurztraminer



More local flavours with this next one – the cucumber with tomatoes & galangal

Canadian scallops and Cameron Highlands kale & flowers. Paired with the Pegasus Bay Pinot Noir nicely.

king prawn, carrot bisque was the star of the show – super toothsome and gorgeously plated as well.

An tough cut of wagyu beef with barley & truffles paired with the Il Poggione Brunello di Montalcino

Wonderfully refreshing Kaffir lime sorbet, green apples & lemongrass

Sweet potato, gula melaka & santan


nutmeg-topped biscotti

All in all a fun night out with some creative Noma inspired dishes. We look forward to experiencing more of Chef TC’s cuisine soon.
