Tuscany Lardo – compressed pork fat, marinaded for 2 months with rock salt, sage and black pepper
This is the place to visit for Lardo, that silky smooth cured pork back fat, Nduja a spicy spread of pork minced with peperoncino chilly or even slivers of tantalizing Jamon Iberico. Where numerous exotic tapas paired with rustic wines will keep you lingering at the lunch table for hours. Look out for Tripes, Beef Tendons and Octopus to name a few.

Chef Fabio Ruggiero who hails form Bari, the capital city of southern Italy’s Puglia region, is the man behind this restaurant. Apart from the regular items on the menu, there are also off the beaten track items such as the Nduja and Bagos that are seasonal and not always available – I always prefer to ask the ‘experts’ to recommend the top items to eat, not on the menu. Isn’t it just more exciting that way?;)

aglio olio spaghetti with white anchovies, breadcrumbs and pecorino cheese and baby cherry tomatoes.
Kill me now. The best white anchovies ever. And talk about carbo loading before my 30KM run. What’s there not to love about aglio olio cooked al dente?
Brunch is also a real thing at Sapore.
Solferino Breakfast serves Salsicion Spanish, Cotto ham, Parma Ham, Manchego Cheese, Pickled vegetable , Salad & Toasted Bread.
Eggs! Can’t go wrong with eggs, and just check out the deep yellow of them yolks…

Aurora Breakfast – Marinated, Smoked, Black Peppered Herring with Roasted Potato , 2 Poached Eggs & Fresh Salad
Again, I was crazy about the Herring but perhaps too salty and strong tasting for some.
Gin tonic cocktails and the Old Fashioned. Both were a bit watered down for our liking. We prefer our cocktails strong.
Tiramisu and Creme Brulee… not that we had any more space for dessert, but still, we kept on going.
Sapore is definitely a must visit for Tapas and other Southern Italian delectables. Always happy to meet up with my favourite chefs.. afterall, they do such a good job of feeding me 😛
