1. what got you started – why baking
It’s such a long story; but i guess what drew my interest to baking was the responses I got from everyone each time they saw a baked goodie or treat. It was like WOW! Su made a CHOCOLATE cake! Yay, SU baked Cookies!; compared to; thanks for the fried noodles @ lunch Su. It’s the joy in their faces and how their eyes light up each time dessert came to play. It’s incredibly satisfying to be in this line of work.

2. who is your favourite baker and why?
Nigella Lawson; because she’s sexy 🙂 hahahaha No no..wait; it’s got to be Mercedes Strachwsky from Bake Me a Cake in Orlando Florida. She is incredibly talented and artistic; she and her family have inspired me so much!

3. your favourite travel destination for FOOD/cakes
There are SO MANY! but i would definitely go for the up and coming pastry regions like South America and Japan for the groundbreaking dessert trends.
4. advice for budding bakers
Don’t be afraid to be inventive. And don’t be afraid of mess ups; with a hint of positivity; they can sometimes turn out to be unexpected discoveries.
5. what is your favourite recipe and why ?
The pear + Walnut cake recipe
Because? IT’s THE FREAKING BEST! super crazy yummy! Don’t forget to slosh on the cream cheese frosting and generous dusts of cinnamon. It’s what I call GOOD cake!

Su’s Favourite Recipe of Pear & Walnut Cake
Stuff you need
150g butter softened
1 1/4 cups caster sugar
2 large eggs
1 1/12 cups plain flour
2 tsp baking powder
1/4 cup pear juice (I couldn’t find pear juice…so I used a bottle of something with pear in it)*shrug*
2 large packham pears diced roughly
1/2 cup chopped walnuts
1/3 cup sultanas
2 tsp ground mixed spice
2 tbsp honey and some extra to serve
Method
Cream butter and sugar in a medium bowl till light and fluffy. Add in eggs one at a time, beating well after each addition. Sift all dry ingredients and gently fold into butter mixture alternately with pear juice. Stir in walnuts+sultanas+pears until well combined. Spoon mixture into greased 9inch round springform pan/ or equivalent and smooth the top with the back of a spoon. Bake in 170 degree oven for 1 hour or until skewer comes out clean.
Remove from oven and brush honey over the top of the cake. Frost if you wish. If you don’t, serve hot with an extra drizzle of honey! Dig in!
Frosting:
100g cream cheese
1tbsp honey
1 tsp ground cinnanmon
Beat till smooth and fluffy. Spread onto cake only after the center has completely cooled.

the pear cake is THE BOMB! packham pears are the secret to these yummy cakes! it is seasonal though :(… but it’s in season NOW! yAY!

What a wonderful article, Su is truly admirable! I would love to try my hand at baking the Pear & Walnut cake – am curious about the measurement given for the flour though. How exactly do we get 1/12 cup of a flour?
